Stilton is absolutely banging!

Loving all the smelly blue cheeses. The worse they smell, the better they taste.

Even a Camembert that has not a touch of blue about it stinks to high heaven when ripe but tastes sooooo good!

I also love a well aged Cheddar. Those that are crunchy with crystals of Calcium Lactate. Such a great rounded flavour!

Stilton can, by law, only be made in three counties:

Derbyshire
Nottinghamshire
Leicestershire

The name comes from the place Stilton, in Cambridgeshire, but the cheese can't be made there.

There are different varieties, like mature Stilton.
