You've written the puzzle wrong, I think. Thursday is ruled out twice.

They have written it wrong, then. For it to make sense the final clue should say 'Today is not Monday or Tuesday'. That leaves Sunday as the answer.
The way they have written it means today could be either Tuesday or Sunday.

No I hsaven't, I have puzzled over this and arrived at Sunday. I couldn't possibly consider that I am wrong.
Have you tried my logic, though!
The answer is clearly meant to be Sunday. It's just that whoever posted it online originally made a mistake writing it. They ended up ruling out Thursday twice.
