1999 1.25 Ford Fiesta Zetec Temp Problems

Recntly had a new engine put in my car. Went on a long trip after a while realised the temp was up high almost in red stoped for 5 mins and went back to normal. Which suggests its the fan not working, which is right. But also now after using the car for small trips, when I stop the car I can hear the water bubling which suggests to me the water isnt circulating properly would this be the thermostat?

It seems like its either a thermostat, head gasket or pump problem, so I'd try running without the stat first.
If no joy there, ask a garage to do a 'sniff' test to see if there is any exhaust leakage into the coolant.
Also check the heater valve for leaks as air can get in there too.
