How do the current ratings work on 3 phase MCB`s?

If a had a C32 3 phase Mcb protecting a circuit will it protect each phase at 32amps or is it 32 amps for the whole circuit in question?

32A per phase, but if you overload just one of the phases then the breaker will isolate all three.

will a 3 phase breaker work correctly if i only use a single phase from it?

say for example i have a 3 phase and neutral supply to a switch fuse, but I only need to use a single phase and neutral from it for a fork lift charger?

Don't see why not, they are in effect 3 single phase MCBs connected together to mechanically trip simultaneouslty.
