I am going to fit two of these. As they are high wattage, am i correct in understanding that i'll have to connect them via a fused switch to the ring main. do i use 2.5mm wire to connect from the ring to the fused switch? and what type of wire do i connect from the fuse to the lights is 1 or 1.5mm ok or will it need to be 2.5?

Connect the switched fused spur to the ring main with 2.5mm and use 1.5mm to each lamp.
Watts = Volts x Amps so each will take 500/230 = 0.5 Amp so replace the 13Amp fuse with a 3 Amp fuse

me garden overlooks a massive pond and as there aren't any neighbours in that direction. i don,t have to worry about blinding anyone. apart from maybe incoming flights

That aint right is it  2.17 amp would be nearer the mark for a 500watt fitting - I would hate to see some of your installs

er.. no. 500/230 is 2.17. not 0.5

mate of mine woke up one day to find an aeoplane at the top of his stairs, turned out he left the landing light on

but seriosly, is that wise? since the lights will be above you when on you will cast a shadow, why not opt for some garden lights instead?
