to my eyes it looks like the wood curves down dead level with top off the other worktop so the only "V"is the shaped edge on the grey worktop without an actual gap between them??
if that's the case it will just be the odd crumb or small spill, so a damp cloth or soft 2" paint brush would surely work best without the visual distraction of an infill ??
Clear silicone inbetween the work surface and block, would prevent liquid runing down, would only require a one-off heaving of the block.
Then the paintbrush idea has less to sweep out.
On another furum one person had a chip that broke on his black granite worktop, clear epoxy recreated the profile and no one noticed the missing bit. Same theory, but you want it flexible to accomodate movement, and to be removed if needed at a later date.
