I've been quoted for bedrooms and stair carpet from two companies. The amount of carpet quoted is nearly 20% higher for the company supplying my preferred carpet. They insist the amount is correct. Presumably the shop with lower calculation wouldn't turn up with insufficient carpet and try and charge me extra. Where can I go with this as it's too difficult to calculate myself.

I don't know what companies have quoted for you but I am sure if you went to a local independent carpet shop "with cash" youl get a better quote and service.
Maybe one of the companies fitters does not waste so much carpet, or the other company do multi joins.
Can you measure the rooms yourself,there will always be wastage.
