Changing pendant to spotlight's

I am having my kitchen done and I currently have a single light (which has 5 X bulbs on) come out of the ceiling in the centre of the room

When I have my kitchen refit, I want to put led spotlights in (x6).

What do I need to to in order to do this?

Do I connect the current cable into a terminal block? What would be required?

Also, can this be done without having to take up floorboards in rooms above? I've just renovated, including new floorboards upstairs so really don't want to have to lift them

This is your largest consideration. You will need to get wires from the existing pendant position to where you decide to place the down lights.
Unfortunately for you, the ceiling is held up by strips of wood that are between the ceiling plasterboard and the floor above. These bits of wood are called joists. These are most inconvenient as they will get in the way of where you might want to run your wires.

The easiest way is from above, just lift the floorboards and you have all the access you need for the job. Unfortunately you haven’t planned things in the right order. You should have sorted out the downlights before finishing the upstairs floor.

You could take the ceiling down. Otherwise you’ll have to cut access holes at each joist position, drill holes for cables, run the cables and finally make good the Swiss cheese effect you now have in the ceiling and call in your favourite plasterer to smooth it all over.
Simples!

Next will be how to connect if all up. You’ll need to replace the pendant rose with a junction box. This will be up in the ceiling and inaccessible, so you will need a maintenance free box to terminate all the existing cables that are currently in the rose, as well as the new ones going to the individual down lights.
You’ll need to do this before the plasterer arrives! Test the lights work before you say goodbye to the junction box forever.
Easy peasy.
