I was wondering if anyone has tackled this, covering an uneven stone steps (cellar/basement) with wood, any techniques to get them all straight?

I've done it ( under orders rather than my own idea) and seen it done previously. It is a bit of a bodge if I'm honest but doable. Best way is to fix the bottom riser first then screw the next riser to the tread first. That will allow you to fix the riser to the vertical face of the stone. You may find that you will need packers or slivers of timber or plastic on top of the stone tread before fitting the next tread/riser combination and so on up the stairs . Keeping the risers and treads cut square and parallel will aid you in keeping the whole thing straight.
To be honest it has been some time since I've done it probably because it is looked upon as a bit of a bodge and screwing into stone isn't something encouraged nowadays whereas repairing the steps with indents ( essentially a stone splice) is accepted.
