Gents,

When dotting and dabbing the plasterboard to the wall, how much of a standoff should there be between the wall and the plasterboard?

I am getting about a 10mm stand off when i have pressed and levelled the boards up, is this about right?

Yep. Anything from a couple of mill, to over an inch in particular circumstances.
Normally about 10-20mm’s ideal tho
