Fill, jointing tape, skim and sand back
What product can I use to fill? Any gap filler?

Depends on how much you have to do, as at some point it will be cheaper buy a bag of bonding or one coat.
A small section.that a caulking tube size or two should fill

No need for jointing tape. Caulk wont work as it will shrink back.

can you not break off some 2cm strips of plasterboard and squeeze them in? Or is there nothing to fix them to?
