Filling gap alongside back door

I'm replacing a door and window with some double doors. I've been left with quite a deep gap though that seems just just be crumbling brick and dirt

What would be the best way to fill it before self levelling. Could I just use concrete to fill the void and then self level over the top? Would I need to add a layer of DPC?

Remove the visible course of bricks. Line the trough with DPM. Fill with screed mix.

If you wanted to be posh, you could include a wee bit of insulation.

Correct. The insulation may be overkill, considering the rest of the floor may be bereft. However, it might just help with condensation, being so close to the doors.
