Filling gap alongside back door

I'm replacing a door and window with some double doors. I've been left with quite a deep gap though that seems just just be crumbling brick and dirt

What would be the best way to fill it before self levelling. Could I just use concrete to fill the void and then self level over the top? Would I need to add a layer of DPC?

If you wanted to be posh, you could include a wee bit of insulation.
