Ive removed out old fireplace and fire which had a back boiler behind as well, so now the hole is quite wide.

What size should this be to allow for a normal fireto fit in and also where should I pipe the unconnected gas pipe to, to allow corgi regiatered to test and connect? The previous pipe was on show

You shouldn't do anything with the gas pipe - that's for Registered Gas Installers only.

I think you should have involved your CORGI by now as you have more than likely overstepped the mark
