fluctuating hot water

Hi,
hot water goes from scalding hot to freezing cold and back again when drawn off.
could this be the hot water sensor not doing the job, if so is it easy to replace?

You have forgotten to tell us which boiler you have got!

However, this is almost always a blocked secondary heat exchanger.

oops sorry it was in the header line,
I have a Ferroli Modena 80 e, if its as you suggest is it just a case of taking it off and clearing the blockage?
