Garage Conversion project

Hello,

Can anyone provide me with how to's and guidance on installing French Doors into an up and over Garage Door opening.

It is a detached single garage at the rear of the garden, single brick wall construction. I also would like to know any info on DPC (Paintable??) and guides on laying floor onto concrete slab.

The garage will become my study to free up another bedroom and eventually a man cave.

Power already exists through underground conduit, from RCD indoors. No water needed.

Would I then lay floor joists? Or can I go straight on top with something like this:
