Grout colour and sealing

I'm tiling a bathroom with large 300mm x 600mm tiles.
Wall tiles are beige, floor tiles are a darker mud colour.
I wanted to match the grout colour, and was going to mix coffee in to the grout. That was before I did some research on the web, which seemed to suggest that this was a bad idea.

Is there a dye that is ok to use for this? Something I can mix in with some ready mixed grout.

Also the tiles are not glazed, do I have to seal them and what product should I use.
