How to match varnish colour

Hi. I have a table I got off gum tree.

I want to restore. Sand off and revarnish/colour.

I’m not sure what finish is? I’ve attached picture. What’s best way to choose colour?

Looks like a dark oak or Jacobean oak although it also could possibly be walnut. Either way, choose a water based stain, make up a weakened mixture and apply multiple thinned costs (with a foam paint brush) to build up the colour to the required darkness. Finish with a clear lacquer of appropriste matt/gloss level
 
Looks like it may be a hardwood (carved) so may only need a clear varnish to finish . Test on underside.
 
I too think it's walnut.
If you repaint it all, it doesn't matter if it's the exact same shade.
