I am putting my shower tray in soon,, having just raised levelled my floor joists to make the floor level.

the shower drain plug will be 2.6m away from the exit of the pipe from the house

where the waste pipes currently exit the house, they are 5cm LOWER than the top of the joists, so once i have put my 22mm chipboard on, followed by mortar bed and the shower tray, do you think this is enough all?

Well you haven't said how deep your joists are, so it's not really possible to answer that question. Ideal fall is 44mm per metre, so 115mm along the length in your case

7 inch joists but the waste exists at old floor level, so 3inch lower than where shower will be.
