Kitchen flooring advice required

Our never ending joy of a previous DIY "enthusiast" kitchen has brought us another present. Looking to replace the flooring (laminate vinyl) but it has been fitted underneath the units (great idea right?).
Really we are looking for the easiest way out and our hope is that cutting around the units ends will provide that easy way out, what would you recommend for doing this?

I'd screw the leg up, remove the flooring then lower the leg back down. Use a solid spacer under the leg if you need to.
