Lath and Plaster - asbestos?

I'm no expert, but essentially no - it would be bizarre to find asbestos in lime plaster.
You will find lots of dust and most likely horse hair.

Agreed, unlikely. What you'll find instead is a bit of lime (gritty and can irritate the eyes), soot (which kills the primary filters in vacuums, so use a bag) and horse hair.
Prior to 1919 horse hair wasn't disinfected prior to use, so really old horse hair might possibly (although unlikely) contain a long lasting pathogen such as anthrax and this is one of the joys of working on listed buildings (and is why we are required to undertake an anthrax survey on such buildings before commencing work)...
