I’ve ripped up an Indian stone patio and I’ll be re-laying it

I’m using SBR and cement mixed with water as a slurry and then I’ll be laying

The patio is on a curve and it slopes in both directions. There are 5 ‘rows’ of slabs as per the picture below

I’ve lifted the slabs, dig out the awful dot and dab mortar and left with the MOT sun base which is actually ok, just need to re compact it

When laying the slabs, I was going to work from left to right (slopes from front to back and also right to left) I am going to work in rows.

Esentiallly I was going to run a string line along the long edge of the paving slabs, running from one edging to the other edging. I presume by following the slope/height of the edging using a spirit level resting on both edges and the slab at the same time, is the way to proceed with this one?

Pic as current:

No my area of knowledge although I'm putting down 3 pallets of sandstone ATM.

I'm using a 3m straight edge which is a old blind rail and wood to get my levels.
My slabs aren't that flat so that don't help.
A line is good to check but it gets in the way.

If you use resin joints that lets water through.
Seal the slabs as well.

Got any other questions I might be able to answer.
Not sure I'm much help though..

My effort.
It's ok.
I'm no expert
