I have a M8 bolt what size do i drill to tap it out with a M8 tap?

M8 x 1.0 = 7mm drill.
M8 x 1.25 = 6.75mm (or 6.8mm) drill.
M8 x 1.25 = 6.75mm (or 6.8mm) drill.
GaryMo is of course correct, but realistically, you'll be able to tap out a 6.8 hole to M8x1.0 or M8x1.25 no problem as long as you use a tapping lubricant.
