Making a hot box, advice with components very welcome

Hi,
I'm making a hot box to heat geopolymer concrete. I have all the components, posting here to ask and check about the electricals.
Got a broken oven recently (faulty PCB) and an Inkbird thermostat. The hotbox will be made with insulation foam, but for now will use the oven for smaller test pieces.

Can someone tell me the live and neutral wires for the heating element and fan?

Have searched for the schematics but could not find any, got a multimeter but already took several wires out of their starting position so can't find out which wires are live and neutral for the fan and element.
Have been using Claude app for advice.
Posting here for better advice.

The 2nd pic shows the element at the bottom of the oven. Am I correct assuming the red wire in the right connection will be live? Its about 50% thicker than the brown wire on the left connection.

The 3rd pic shows the fan, both the black and white wire have been disconnected from where they went to by some plonker.

The 4th pic shows what I'm fairly sure is two thermal cutouts, is this correct. The live wire from the main power plug went to this first and it has this writing underneath- T1-33 250v~16A 205°c T230 2042. I will be using one thermal cutout.
