Making safe ceiling spotlights?

I am currently removing and replacing the ceiling due to water damage(aswell as rearranging the room generally) in our back extension which needs some modernising. In the centre of the room is an old looking spotlight (2 turnable lights mounted on 1 circular plate. sorry with the bad descriptions!
The ceiing will be taken down asap and the rest of the room demolished basically beofre rebuilding. Therefore the wiring may be left hanging flor a while before the ceiling goes back up.
What is the correct way to do this safely? i know to turn power off and remove fuses but i mean in regards to actually removing light then leaving wires exposed?

Don't leave wires exposed even if you argue that theres only you to touch them. The spots you describe are a standard fitting so you will probably find a 3 way terminal block fed from another 4way term block. Best way to isolate is to disconnect power to lighting at the board. Test circuit to make sure it is dead, not with a neon screwdriver please. Remove the three sets of blue and browns going into the 3 way terminal block as well as the g/y. This will leave the terminal block in place and you can enclose it in something to insulate it from the builders :eek:
 
would this not mean then i couldnt have the house lights on during the time between? i just want it so the main wires are left so that its ready for a new light to be put up like in a new build? it may be a couple of weeks between it coming down and the new things going up,
