With this kind of stuff, I'd fit it to the walls, then fit the tray. I would, however, use plenty of silicone to stick the tray to the boards. Without reading into it, I'm not sure how it fits together but if possible, put a small bead of silicone in the joints too.

It can lock together with a joining strip and a bead of silicone or you can pre-order it tongue and grooved, which I have done.
However I have just receIved a reply from multiPANEL and they say fit tray either way but recommend that you butt it on top of tray. As I am covering the whole length of wall it would be surely better to fit the board first.
The reason I suggested fitting the board first was just in case any moisture found it's way through a failed silicone seal on the tray/wall joint. It would soak straight into the end of the sheet where it was cut around the tray and cause damage.
As you have a highly waterproof wall surface, I think you'd be better fitting the wall first, then heavily siliconing the tray to the wall. If you can properly waterproof the joints, that should result in a bomb proof job.
