I am replacing my bathroom vanity light. The old one I have just disconnected had an earth wire (plus live and neutral) the new light fitting only has live and neutral. What do I do with the earth wire coming from the wall. I assume I insulate it and disregard it as it does not seem to be required.

if your new fitting is indeed double insulated and does not require an earth, just put the earth cable in a piece of connector block
