I've just fitted a wireless doorbell, I've also disabled the mains powered doorbell by cutting the wires on the doorbell switch and disconnecting the wiring from the bell itself and using insulating tape on the 2 wires to open the circuit. Is this safe enough, or should I also disconnect the wiring from the transformer and tape them up as well?

Yes, you should disconnect the mains supply from the transformer too.
Note this is 230Volts and dangerous voltage.
IS that easy for you to do? Post photos if you are not sure.

I was thinking about just disconnecting the wires from the d.c. end of the transformer, also I'm wondering if because the wiring is now O/C by disconnecting the bell would that be ok?

It will be OK to just disconnect the low volt side of the transformer (note, even at 8volts, it is still a.c. not d.c.)
but better to disconnect the lot as you are never going to use it again.
