New Sink

Hi

I want to install a wall hung sink with no pedestal with drawers below then a gap from bottom of drawers to ground but the old sink i took out has the hot/cold & waste pipe coming out of ground.

I have took all wall tiles and floor tiles up as well is it just a matter of me tracking out the floor and wall to sink the pipes?

Yes.

If pipes are to be plastered over ensure they are lagged

If it's a fully floating vanity unit you need to make sure the wall and anchors are strong enough to take it. Need to remember it's the weight of the basin that could be full of water, the vanity unit itself and then contents when it's been filled and any leaning weight there may be as people will lean on the basin when it's being used.
