Is it ok when disconnecting an old doorbell to just put both cables into connector blocks and leave the cables in the wall cavity?

Not clear on where it’s going into the CU

Is the bell a battery bell? If so then no problems.
If it is powered from a transformer you need to find where it is and disconnect that from the mains supply.

Send a pic of the CU (with the access flap open, we dont have x-ray vision!) and any attached boxes, we may be able to spot where it is.
