but you know you get 3 pole breakers what do you do with the other 2 poles if you just use one live

If you have a single phase circuit you use a single pole breaker, if your circuit is three phase thats when you use the 3 pole breaker

is 3 phase really that easy then you just use 3 pole or single pole breakers in a 3 phase dboard and blank other 2 off for single phase

as industryspark says, you have to carefully design and balance the board to start with, so there is as little current flowing on the neutral as possible - though it is not always possible where intermittent loads are concerned. For example, lights in a shop are usually divided between the 3 phases as these are a constant load. The cooling or heating equipment where it isn't 3 phase is also divided between the phases on seperate radial circuits.

When adding onto a board, you have to carefully consider what is already there and which phase is best to hang your new load on.
