Plumbling For Americian Fridge Freezer

I want to buy an americian fridge freezer, however the one i want needs cold water feed.

My sink is on opposite side of kitchen to where fridge will go so i plan on cutting a channel in the concrete floor and laying a pipe to other side of the kitchen.

My questions are:

1) i was going to use copper pipe but do you think plastic would be better? pros/cons?

2) What fitting is actually required to go into these type of freezers.

I plan to T off the cold water pipe, run undernearth the floor to a ball (isolator) valve, then connect into the fridge.

IO would be grateful for any advice any advice
