Porch cladding

We've just bought a house with a timber framed, unheated, enclosed side porch (leading to the back door). The interior hasn't been finished (bare timber frame) however we're not sure what to finish it with. Would plasterboard be OK in an unheated porch or do we need something more substantial such as ply or OSB? We're concerned about condensation. Any advice welcome. Thanks
