It is just muscle. You see it in fish too. The animal is completly dead.

You see it on the shoots when pheasants are dead but still flapping their wings and when I used to go fishing with my dad, if he caught an eel he would take it home to jelly it but he would chop it up on the bank and you would see a dozen individual sections of eel wriggling for some time. It’s just nerves.
