Quinns cement - does it dry lighter?

I've perfectly mixed 3-1 some cement for repointing but after 1.5 days, the 1st batch of cement is still as dark as the bit I did late last night ie. no change in colour. Will it dry a lighter grey? It's not outside although in a kitchen with no external doors so would have thought the air would have been sufficient to start drying it out.

I'm a bit con concerned it'll look a bit patched if it doesn't dry in.

Mortars mixed using differing manufacturers of cement can vary quite substantially.
It is not clear as to whether you are asking this or whether cement from a single manufacturer can have varying batches.

We did have problems with cement from Castle once and it was confirmed that although the bags looked the same the code printed on the bag deemed that it was a different product and should not have been sent to my local builders merchant.
 
Suction, depth of the joint, drying and tooling also affect the final colour
