Are you making the meal for the MiL? We've got our kids and grandkids coming round and I’m doing a roast. The beef is coming up to room temperature as I type. Season it, sear it to seal it, cook at 160° until it hits 40° in the middle then rest for at least an hour before carving. It’ll be perfect.

Thanks. Yeah, we have some of that but the recipe we follow specifically says cornflour. They came out really nice.
