I've removed a kitchen, in doing so much of the render has loosened or come off. I've remove the render up to where is stable, there is now no render between the floor and a roughly 6ft. Should i remove the render to the ceiling before getting a plaster in?

this is my first diy, and im totally lost

To put it quite plainly.. yes.. doing a "patch" that size is useless.
It may work out better to dry line it with plaster board and have it skimmed.

Definitely,, take it all off right up to the ceiling. I'd also do what Stef suggests. Batten, insulate and plasterboard the walls, then skim.
