Replacing triple switch with dimmer?

Hi
My kitchen has 12 downlights, with a triple switch at the entrance, which turns different sections of the room, one of them only turns on and off two of the downlights which seems silly.

There is also another switch by the garden door which turns on and off 5 downlights, the same as one of the switches on the triple switch.

I would like to have a dimmer instead. Even a single dimmer that controlled all of the lights would be fine, but a double simmer could work also.

How would I do this? Would I just join all the circuits into a single dimmer switch? Also, what about the linked switch by the outside door?

Any advice would be great, as you can tell I have very little knowledge about it ;)
