Is it ok to use strongboy props on the first floor to create an opening coming off existing floor joists or is it better to go from ground level with longer props?

In some cases yes, in others no definitely not.
Depends on how much weight the props are supporting and where abouts within the floor/how many joists you’re supporting the props off.
