Should I replace my (possibly 20 y/o) Ideal Mexico 2 boiler with a modern combi?

New conventional boiler may be the way to go, the system will need to be upgraded to a Y or S plan, (I dont think new boilers allow for gravity HW systems anyway). If the cylinder is one of the older types without factory applied insulation, it would be prudent to change that at the same time.

I have this exact boiler at my parent house and it is at least thirty years old

same problem as op you cannot have hot water without heat which is a waste but it’s not been serviced or touched for years and works every time

it’s a six bed detached house and they were talking of replacing it with a storage boiler viessman 222.

maybe some of the wise folks on here can suggest whether an invented system would be better. Four bathrooms as well
