Here's a concealed shower valve flow control handle...
Manufactured badly! The screw in handle doesn't have enough protruding thread to make contact with the valve spindle....

I've established it's an M5 thread, but how would I remove the excess material so a thread cutter would cut the thread longer?

That's a truly crap design, unless there has been something snapped off!
Ideally you'd need a lathe to reduce the spindle diameter, but check out showerspares.com to see if they have a replacement.
John :)

Couldn't you just use a stainless M5 bolt with the head cut off and a screwdriver slot made?

I tried that, but it looks a bit rubbish because the diameter of the current rod is more like m8...

Can't find a replacement, not helped by not knowing who the rubbish manufacturer was!

Need to find someone with a mini lathe....

Does the screwed bit with a point unscrew from the thin handle? If so it may be an Allen grub screw. You would take the screw out, screw it in to secure the main part of the handle onto the valve spindle, then screw the thin part of the handle back onto the Allen grub screw.

Oh gawd! Yes! I feel like such a Muppet! It is exactly as you say.... Nice one, thank you!
