Starting extension with possible required packing

we are building a extension and want to start a footing. I like to do the footings myself but the likely is we would need packing.

Obviously if packing is required I would hire a contractor. What’s best way to start? Dig for a bit and see what’s underneath?

Whats "packing" for - is that to go away for a few weeks away from the noise and mess?
 
Maybe am using the wrong word. We are on a ex quarry and it’s likely the foundations would need steel support

Generally your local bco would have a good idea about the ground conditions in your area, assuming it's not just your house.
An se would have the same information at greater cost, although his approach may well fall back on your start digging (trial holes)
 
You could look at the house foundations and that will give a very good idea of what will be required.
