Stone wall what to cover it with ?

After my stone taking weeks to come it's now freezing and it needs doing
Can anyone tell me the best stuff to cover it up with if it rains and over night the builder said someone called esion or something or any tips to keep it good
Any help appreciated

Hessian (sacking) & visqueen if it's going to be frosty.
