Stud wall for extra insulation on an old house good idea?

Ah well, not sure he is putting up a vapour barrier. He is going to use foil coated kingspan though.

Can a vapour barrier be added afterwards in this sort of style:confused:

Yes, you could do that before plasterboarding. The foil on the Kingspan also acts a vapour barrier - you (or he) could seal the joints with the appropriate tape, also covering the studs. Or just use foil-backed plasterboard.
