Turned of water supply, water still running

The water is still dribbling, which leads to my next question, will it still be possible to replace the kitchen sink, with the water still dribbling out of the tap? Thanks for all help so far.

Get a new stop tap ready and cut pipe and fit.
Use a pushfit or compression and If you leave the stop tap open it wont spray everywhere then you can close it when on the pipe.
