Tv Bracket On Plasterboard

I'm trying to mount my 55" TV with a bracket over my fireplace.
The original brick chimney breast has been covered with plasterboard but there are no studs in the central section where the bracket
needs to be secured. The plasterboard is 30mm thick with a cavity behind and then brickwork. I was going to use Gripit fixings but they only
seem to go up to 25mm.
Can someone recommend the best way to get a secure fixing for the bracket please?

A few options. Either use a bracket with a large footprint on the wall so the bracket covers at least one stud.

Or use plasterboard anchors that need a setting tool - these are the most secure fixing for plasterboard.

Or long screws into the brick behind. Insert a drill bit to find out how far we're talking.
 
Over the fireplace is too high. You will get a crick in the neck. Also heat from the fire will shorten the life of the TV.
