My son took up an old parquet floor which had been nailed through the tongue into the supporting beam below. (Suspended floor) This was about 10 years ago and I would like to use them in a bedroom which is close boarded with a mix of very old and some new replacement boards. Therefore the floor is not particularly level and as the house is over 300 years old nothing is very straight. Could I use something to even out the floor before laying them - something like the material used under a 'floating floor'.

Yep, parquet flooring is pretty accommodating when it comes to undulating floors, but it's worth taking out out the unevenness first. apply a leveling compound to any really bad areas or all if you prefer, this will split at any contracting joints but the faces will remain in the same plane. An underlay for laminate flooring (about 4 mm blown polyester) or similar will fit the bill on top of that.
My only concern would be the new replacement boards. If spruce or another pine, they will tend to shrink and cup quite a bit, in my experience, so some extra face to joist fixings might be prudent...pinenot :)
