Waiting for plaster to dry before installing wood worktop

All standard advice for timber worktop installation is to not install for 6 weeks after any plastering is done.

I understand the reasoning and theory etc.....

But in reality, how important is this advice, and how big is the risk? I'm having my kitchen plastered (mostly onto plasterboard, but one small section of external wall which will require hardwall as well).

Anyone here with any real experience of this?

Surely if the plaster is dry, probably within a week, there is no additional risk?

Our kitchen was skimmed and hardwalled in places and I fitted the kitchen 10 days later. 9 months on and all is fine.
