i want to take water heater off the mains and add a plug so i can fit a timer. how can this be done

Firstly what do you want to do exactly?
What size water heater?
Buy the right tools and equipment for the job and do it properly i.e. if you are talking of a 3kw immersion heater then it needs to be on it's own circuit and you can buy timers specifically for purpose.
A new circuit is unfortunately notifiable to your LABC under part p of the building regs so will probably be cheaper to get an electrician or a plumber who is a member of an electrical competent person scheme in to do it.

Erm, what you said . . . but DONT!

There are other ways to automate something, than plugging it into a plug timer.

And there are many combinations of wiring an immersion heater - for example if you have two elements on economy 7.

You can get 3kW immersion heater timers which don't use a 3-pin plug.

Like this

Do you have an existing isolator switch near the immersion heater? You can disconnect the heater flex from the isolator and then wire the timer in between the isolator and the immersion.
