Creme fraiche sounds good.

It's surprising how many people don't like mash. I absolutely love it. I did have a phase when I was young where I hated even the smallest lump, so I would mash it all again on my plate with a fork.
Well, like I said I went through an “I don’t like mashed potatoes” phase myself as a wee lad. Thankfully I grew out of it quickly and now I do like a nice dollop of creamy mashed potatoes!

I like mine with some French mustard and Parmesan grated in.

No. Both Mrs Mottie and I were just inside the 'at risk of diabetes' scale (42) so were offered to go on some scheme to back in the safe zone (max 41). We were given a recipe book and that’s where we got the recipe from. That meal suggests either vegetables or a salad. In fact most of the recipes in this book are delicious and filling.

Whenever I do duck or venison with green vegetables and a rich, fruity sauce, I always use wholegrain mustard in my creamy mash.

I make substitutions all the time in cooking. The other day I made a chicken dish that called for coriander but since Mrs IfInDoubtDIY cannot stand the taste of coriander I used parsley instead and it was delicious.
 
I adore black pepper. Have it in, and on everything. Lots of it.

Family think I'm nuts.
 
A homemade corned beef pie, mash, peas, cauli, and gravy. It turned out not bad at all, even for a first attempt. Soon, to be followed by tiramisu.
