What have you had for dinner

We had salmon with mashed potatoes and green beans. To cook the salmon I garnished it with butter (or Olive Oil from Mrs IfInDoubtDIY), topped with Dill and a squeeze of lemon juice then wrapped it in foil and baked in the oven for 20min. Delicious!

I love mash and green beans together. Sometimes I just eat a plateful of those. Lots and lots of butter in the mash, and sometimes olive oil as well.
 
Chicken, prawn and veggie curry. Not mixed, three separate ones!

Chicken for the lad, prawn for Mrs S and veggie for me.

Parmigiana is made with fried sliced aubergines and ragù.

I’m pretty sure that’s Aubergine (or eggplant) parmigiana. AFAIK you can get meat and chicken versions. Whatever you use, you make a tomato sauce with garlic and herbs and cover your Aubergine, meat or chicken with the sauce, adding sliced mozzarella and grated Parmesan. Bake the lot in the oven. Magnifico! ;)

Have to be honest I’m not much of a fan of green beans, I mainly cooked those for Mrs IfInDoubtDIY. I do like mashed potatoes though (despite going through a brief period as a lad where I didn’t like them), I normally do them with a big wedge of butter and a cup of milk, but this evening I had some crème fraîche to use up so I mixed that in instead of the milk.

Creme fraiche sounds good.

It's surprising how many people don't like mash. I absolutely love it. I did have a phase when I was young where I hated even the smallest lump, so I would mash it all again on my plate with a fork.

I love the aubergine one. I have just been reading that is the original, and that chicken parm was invented in America.

No. Both Mrs Mottie and I were just inside the 'at risk of diabetes' scale (42) so were offered to go on some scheme to back in the safe zone (max 41). We were given a recipe book and that’s where we got the recipe from. That meal suggests either vegetables or a salad. In fact most of the recipes in this book are delicious and filling.
